Soup-of-the-day :)

8 Apr

Do you have your own comfort food?

I have mine 😛

I’ve found the simple recipe of my comfort food.

To me, comfort food should be the food that is so easy to do with easy to get ingredients and you can make it at anytime for anytime.

My ultimate comfort food is mushroom soup.

At first, whenever I feel like eating mushroom soup, I normally make it out from the box.

The instant one, like from Campbell..

or when I’m dining in at Pizza Hut or any restaurant, I always ordered mushroom soup as for the starter

However, to make it yourself is much satisfying rather than eating out from the box or at the restaurant (which I believe they use the same method- out from the can/box).

And thank you to Cikgu Munirah (my colleague), she gave me this hearty, well balanced mushroom recipe.

I made mushroom soup for gazillion times now and all my family members love it!

Trust me, it’s so easy to make.

All you need is:

2 cups of low fat Dutchlady milk

1/2 cup of plain flour

chopped chicken

chopped mushroom

2 cubes of chicken stock

salt, pepper and oregano flakes

First, mix the flour and milk in a big pot. Mix them well and make sure the mixture is smooth and not lumpy

Then, add the mushroom and chicken and the chicken stock into the mixture and continue stirring

Next, cook it over medium heat. Stir until it boils and becomes pekat and season it with salt, pepper and oregano flakes.

And wallaaaaaa, my comfort food is done! Serve it with hot buns or crackers or just eat it like that!

Yumm! Seriously, it only takes about 10-15 minutes to make this and you have one big pot to share with your loved ones or perhaps to only yourself 🙂

Happy trying guys!

Ok done with 2 entries tonight: Jannah

Beef Lasagna oh la la

10 Mar

It’s been a while since I posted any new recipe that I’ve tried out.

Tonight, I want to share with you how easy it is to make your own lasagna.

I’ve tasted chicken lasagna at Secret Recipe which cost me around 12 bucks for a small plate. It was okay but I believed with another 20 bucks added to the 12 bucks, you can eat a whole lot more of lasagna and be satisfied with what you eat.

Easy. It’s like this. Homemade cooking = save money and extra satisfaction 🙂

So, last three weekends, I made a tray of lasagna. And it’s so damn easy to do. Trust me. Easy to do!

I used San Remo’s Instant Lasagna where you can find easily at any supermarket. Before this I thought it was difficult to find lasagna sheets but actually it’s in front of my eyes. I just missed it that inch! You can find it at the pasta section, along with spaghetti, macaronis etc etc

This is how the sheet looks like. You don’t need to boil it like the spaghetti. We use this sheet once the sauce is ready. So just leave it in the box until it’s needed.

For the recipe, I just used the back cover Simple Meal Idea recipe from the same box. Easy yo.

See it’s all written there. You just need to read it and follow the instructions 🙂 Super easy!

Basically, for lasagna, it’s all about the sauce. You have to make two sauces. The meat sauce and the cheese sauce. For the meat sauce, you can straightly use the spaghetti sauce (the ones in the jar like Prego) and heat it up. But firstly all you need to do is sautee the finely chopped onion and garlic.  After that, throw in the carrots and minced beef and sautee it until cook.

After the beef is slightly changed its colour to brown, pour in the spaghetti sauce and season it well with salt, oregano and some chicken stock. Stir it well until it cooks.

Oh, I did add 3 tablespoon of tomato sauce, just to have a sour taste to the sauce.

So the beef sauce is done in about 10 minutes!  Leave it there under slow heat. Let it simmers and the flavors will be intensely delicious!

So, moving on with the cheese sauce.  For cheese sauce, you can use either mozarella or cheddar cheese. I use cheddar cheese instead of mozzarella though I bought both of them.

First step is to melt the butter, about 2 tablespoon. Next add 2 tablespoon of flour and stir it gently for about 2 minutes over slow heat.  Remove from the heat, add 2 cups of milk. Return to heat and stir it continuously until it becomes thick.

Must be this thick okay…

It’s time for the cheddar cheese to work. Add in the cheese to the mixture over medium heat,

and mix them well until it turns out to be gooey. Season with salt and pepper.

Alright, the cheese sauce is done!

This would take about another 10 minutes to complete.

So 20 minutes for both sauces.

Preheat your oven at 180 c.

It’s time for the layering part!

Grease your baking tray with a bit of butter. You must start layering your tray with meat sauce first,  then arrange the lasagna sheet on top of the meat sauce and finish it off with cheese sauce.

Beef sauce at the bottom and lasagna sheet on top

and layer with cheese sauce.

Repeat the step until you got 4 layers of beef sauce, lasagna and cheese sauce. Most importantly is to keep the lasagna moist so more beef sauce is going to help you to achieve the desired lasagna.

Oh before I forget, finish it off with shredded mozzarella cheese.

Bake in the oven for about 35-40 minutes or until cook. Mom taught me to cover the tray with aluminium foil before you throw it in the oven. Why? So your oven won’t get dirty when the cheese melts down.

In the oven now.

And 4o minutes later, it’s done!

So 20 minutes plus 40 minutes, an hour altogether to prepare this comfort food 🙂

Nyum! Happy trying guys!

Eat me eat me :p

So easy and you can keep it in the fridge and preheat it in the microwave if there’s any leftovers 🙂

Do try ya 🙂

Till then.

Hey, I make Bread Pudding! :)

8 Jan

Hye all.

Guess what?

I make a dessert today.

Since it’s been raining non-stop since the morning until now and both my mom and I are so freaking cold, we need some sugar in our veins.

I  thought of baking a chocolate cake.

But no no.

I read one of my friends’ status in FB that mentions about bread pudding and I got salivated, so I asked her for recipe and she directed me to this young man.

And boy, never thought that it’s so easy to make one.

You can get the recipe from him, but I thought, why not I just put it here.

Firstly you have to make the butterscotch sauce.

You need:

1/2 cup of brown sugar

3/4 of a stick of butter  (cut the 250gm butter into three parts, take one part and cut it into 3/4, that’s the part that you’ll use)

1 cup of whipped cream or you can substitute with low fat milk

First, mix brown sugar with 1/4 cup of plain water and bring them to boil. Do not stir.

Once it comes to boil, add the butter. Melt the butter first before adding the milk. Stir well, and bring them to boil again.

Put aside.

Next, you need 5 low cholesterol eggs (in the video, that man uses 8 eggs, so I reduce it to 5 and alhamdulillah it turns out well 🙂 ).

Beat the eggs into a big bowl. Pour a little bit of the butterscotch sauce, maybe half cup into the egg mixture. Mix them together. Then pour the mixture into the remaining butterscotch milk. Mix them well.

Put aside.

For bread, you may need half of the Gardenia tall packet.

You can cut or shred the bread, but for me I cut the bread into half.

Spread some butter on the bread for more of buttery taste.

Place them in a tray or souffle bowl , up to you, but do not forget to put a bit of butter at the bottom of the tray.

Then pour the butterscotch sauce on top of the bread, just enough to cover the bread. Or you can wait for the bread to absorb the sauce first before adding more. For fast result, use fork and press the bread to absorb the sauce.

If the sauce is way too much, it’ll become soggy, but it’s not enough, it’ll become hard. So best way is that the butterscotch sauce needs to cover the bread for delicious outcome.

Bake at 180’c for about 30 minutes or until cook.

Use skewer to check whether it’s cook or not. You know the drill right?

It has to be just like this. Before it cooks.

Don’t worry if it looks like this when it’s in the oven. Still cooking.

Andddd wallaaaa….

Though it looks a bit burn on top, it’s okay. It gives the crispiness side when you have a bite ;p

A sinful treat for supper hehehe.

Alright, here you go. Easy peasy recipe for bread pudding. Anyone can do it!

Give it a try and if you please, tell me about yours, okay?

Good luck!
